1 teaspoon garam masala
1 teaspoon coriander powder

1/2 cup heavy cream
2 tablespoons ghee or oil
Salt to taste
Method/Instructions:
Step 1: Blanche and Puree the Spinach
Boil water in a pot and blanch the spinach leaves for 2-3 minutes until wilted.
Immediately transfer the spinach to a bowl of ice water to retain its vibrant green color.
Drain the spinach and blend it into a smooth puree. Set aside.
Step 2: Prepare the Paneer
Heat a pan and lightly fry the paneer cubes until they turn golden brown. Remove and set aside.
In the same pan, add a teaspoon of ghee/oil and sauté the chopped onions until golden brown.
Step 3: Create the Palak Paneer Gravy
Add minced garlic, grated ginger, and green chilies to the pan. Sauté for a minute.
Stir in the chopped tomatoes and cook until they soften and the oil separates.
Add cumin seeds, coriander powder, turmeric powder, and red chili powder. Cook for a minute until fragrant.
Pour in the spinach puree and simmer the mixture for 5-7 minutes, allowing the flavors to meld.
Add the fried paneer cubes and gently mix them into the spinach gravy.
Pour in the heavy cream, stirring gently. Simmer for an additional 2-3 minutes.
Adjust seasoning with salt as per taste.

Transfer the Palak Paneer to a serving dish.
