What is Punjabi Chole Masala?
Punjabi Chole Masala is a robust and savory dish made from chickpeas (chole) cooked in a delectable, spicy gravy infused with a blend of traditional spices. This flavorful gravy, simmered to perfection, envelops the chickpeas, creating a dish that's rich in both taste and cultural significance.
Ingredients for Serving 4:
2 cups dried chickpeas (or 3 cans, drained and rinsed)
2 large onions, finely chopped
2 tomatoes, finely chopped
2 green chilies, slit lengthwise
4 cloves of garlic, minced
1-inch ginger, grated
1 teaspoon cumin seeds
2 teaspoons coriander powder
1 teaspoon turmeric powder
1 teaspoon red chili powder
1 teaspoon garam masala
1 teaspoon dried mango powder (amchur)
2 tablespoons vegetable oil
Salt to taste
Fresh coriander leaves for garnish
Method/Instructions:
Step 1: Prepare the Chickpeas
If using dried chickpeas, soak them overnight in water. Drain and rinse them before cooking. If using canned chickpeas, skip this step.
Pressure cook soaked chickpeas with salt and water until they are soft and tender. If using canned chickpeas, simply rinse and set them aside.
Step 2: Create the Base for Gravy
Heat oil in a pan and add cumin seeds. Let them splutter.
Add chopped onions and sauté until golden brown.
Add minced garlic, grated ginger, and slit green chilies. Cook for a minute until fragrant.
Incorporate chopped tomatoes and cook until they soften and the oil separates.
Step 3: Spice Infusion and Simmer
Add coriander powder, turmeric powder, red chili powder, and garam masala. Stir well.
Add cooked chickpeas to the spice mixture and mix thoroughly.
Simmer the mixture for 10-15 minutes, allowing the flavors to meld.
Adjust the consistency by adding water if required.
