Step 1: Prepare the Chickpeas

  1. If using dried chickpeas, soak them overnight in water. Drain and rinse them before cooking. If using canned chickpeas, skip this step.
  2. Pressure cook soaked chickpeas with salt and water until they are soft and tender. If using canned chickpeas, simply rinse and set them aside.

Step 2: Create the Base for Gravy

  1. Heat oil in a pan and add cumin seeds. Let them splutter.
  2. Add chopped onions and sauté until golden brown.
  3. Add minced garlic, grated ginger, and slit green chilies. Cook for a minute until fragrant.
  4. Incorporate chopped tomatoes and cook until they soften and the oil separates.

Step 3: Spice Infusion and Simmer

  1. Add coriander powder, turmeric powder, red chili powder, and garam masala. Stir well.
  2. Add cooked chickpeas to the spice mixture and mix thoroughly.
  3. Simmer the mixture for 10-15 minutes, allowing the flavors to meld.
  4. Adjust the consistency by adding water if required.

Step 4: Final Touch and Garnish

  1. Sprinkle dried mango powder (amchur) over the Chole Masala and mix gently.
  2. Garnish with freshly chopped coriander leaves for a burst of freshness.
